Recipe Ideas

Do you have a comfort food that you cook when you are cheerful, or something that makes you think of home? Not all recipes have to require actual cooking- they can be a type of sandwich or salad. We would really love to hear why these recipes are special to you. Please include ingredients with measurements as well as directions.

Example: Biscuits

My mother has always made the best biscuits. As a child, I preferred the pre-made kind that came in a can. Now that I know how much love (and butter!) she puts into the ones she made from scratch, I feel awful admitting that. I now realize, these are now the best biscuits I’ve ever had.

Magic Biscuits

Ingredients:

  • 3 cups White Lily self-rising flour

  • 1 tsp salt

  • 1- 8 oz brick unsalted Kerrygold butter, frozen

  • 1 1/3 cup cream

  • 2/3 cup whole milk

Directions:

  1. Preheat oven to 450 and grease a cast iron skillet

  2. Stir the cream and whole milk together

  3. Put the flour into a large bowl and stir in the salt

  4. Grate 2/3 of the brick of butter into the flour/ salt mixture. Mix by hand

  5. Add about half the milk mixture and mix by hand. Continue adding milk until the biscuits come together but are still a little dry (don’t let them get so sticky they stick to your hand)

  6. Turn dough out onto a floured surface

  7. Pull biscuit sized chunks out of the dough and place in the skillet

  8. Bake the biscuits for 12 minutes

  9. While biscuits are baking, melt the remaining butter

  10. After 12 minutes, pull the cast iron skillet out of the oven and pour the butter over the baking biscuits. Return the skillet to the oven and continue baking until biscuits are done, around 10-15 minutes
